Bacalhau a Zé do Pipo

This is one of Sean's favorites codfish recipe.



Ingredients:
Codfish (I buy Pingo Doce frozen shredded)
Milk to cook codfish
Mashed potatos (also Pingo Doce frozen - just add milk from codfish, extra pepper & nutmeg)*
pepper 
1 large oniion (depending on quantity making) 
2 tablespoons of olive oil 
garlic 
bay leaf
Good quality of mayonnaise or home-made is even better :)
1 egg
  1.  Boil the slices of codfish that has been soaked for 10 minutes in milk seasoned with pepper.
  2. Make mashed potatoes either with the above or by cooking potatoes with salt and then purée (adding the coaded codfish milk, pepper, nutmeg and butter).
  3. Prepare sauté with onion cut into thin half moons with chopped garlic, olive oil and bay leaves.
  4. Baste with butter or margarine serving dish. 
  5. Around the serving dish, arrange the puree. In the middle put the fried onion and on top the slices of cod. 
  6. Cover the cod with enough mayonnaise, and bake in the oven.
Serve with a salad..
